Those look great - I've only done sous vide 10-15 times, so definitely still learning... but I was told that more than 3-4 hours negatively impacts the texture of beef... is that not correct?

Lunch is served, and some meal prep for the week. Both the Kalbi Short Ribs and Beef Tenderloin Kabobs came from The Butcher on Whitlock, all we had do was grill. The Traeger, running between 450 and 500, took care of that easily. Both of these cuts were packed with flavor. Steak & Eggs, breakfast is served! The cast iron of the Traeger Grills Ranger put in work this morning: @caram3lo Duck Fat Tortillas; Pine Grove Farm scrambled eggs cooked with Unsalted Banner Butter, #cattlemanrsgrill Mexicano, green onions, and freshly grated Monterey Jack; and The Butcher on Whitlock Beef Tenderloin Kabobs that they marinated with Hardcore Carnivore Meatchelada and olive oil.
